The Only Two Salad Dressings You Will Ever Need!!

I love salads, and think that a great salad dressing is the key to a perfect salad (as well as avocados of course). However I’ve just realised that I don’t actually have any salad dressings on the blog (weird!!!). So I figured I needed to right this wrong immediately and I so have written below two of my absolute favourite salad dressings.

This is perfect timing to go along side this month’s I.E Produce Post where I show case the delicious Cathedral Cove Coconut yogurt (the base to my first dressing), as well as Hemp Seed Oil, which gives my protein-boosting dressing the kick that it needs.

I hope you enjoy these simple salad dressings and that they encourage you to whip up big, vibrant, and colourfull salads to enjoy during your day (you know I’m a vegetable pusher).

So what are you waiting for, get blitzing and start munching.

My Herby Green Dressing

I have been enjoying a version of this dressing on my salads for years. I stumbled across it when I was flicking through one of my Jamie Oliver cookbooks. He used the creamy avocado dressing to go along side a vegetable chili (this is Matt and my favourite recipe by the way) and I’ve adjusted it over the years to suit my needs, by replacing the yogurt with coconut yogurt and adding in Matcha powder for a superfood boost. It’s best served cold with a big salad full of cos lettuce, shredded carrots, tomatoes, cucumber, radishes and some nuts on top.

  • 2 tbsp. of coconut yogurt (plain)
  • handful of coriander leaves + stalks
  • juice of one lemon
  • 1 ripe avocado
  • ¼ tsp of Matcha powder (I use the brand Matcha.Matcha)
  • salt and pepper to taste

Combine everything into a blender or food processor and blitz until smooth and creamy.

My Protein-boosting Hemp Dressing

I love having a simple salad dressing that I can whip up in no time at all, but still tastes incredible and gives my salad a huge boost of protein. This dressing is divine with a simple salad of lettuce, avocado and herbs which I normally enjoy alongside a bowl of pasta, or some roasted vegetables for a quick dinner. The perfect way to get your daily dose of Omega 3 and 6 Fatty Acids.

  • 2 tbsp. of hemp oil
  • 2 tbsp. of olive oil
  • juice from one lemon
  • 1 tsp of tahini
  • 1 clove of garlic
  • salt and pepper to taste
  • ½ tsp of maple (if you like sweet dressings)

Combine everything into a blender and blitz for 15 seconds (until combined). Store in an airtight jar until ready to serve.

I hope you enjoyed my two favourite dressings and I can’t wait to hear how you find them. I would love to know your own favourite dressings so please share them below.
