1 Pumpkin 4 ways

I hate being wasteful. I’m a person who keeps every last little bit of hummus that’s in the container, who makes bowls of salads with last night’s leftovers and who is the queen of whipping up a delicious lunch when you would swear there was nothing to eat in the fridge.

Homemade Christmas Gifts: Peppermint Truffles

I love truffles. They are so simple and fun to make and best of all they taste incredible. I normally have a few different versions of truffles in my fridge as they are a great quick snack to have on the go or if I’m craving something chocolatey or sweet.

This version, however, is, even more, delicious as I added a splash of peppermint oil to the truffles that goes incredibly well with chocolate. These little chocolate balls are the best Christmas gifts as they’re a little bit naughty but still packed with so much goodness due to the cacao powder and the nuts. I was going to start with “summer is finally here”, but today I look out and it’s pouring with rain, the heaters are switched on and I’m back in my long leggings. Definitely not summer. The day I realised my life had changed + how to make Homemade Almond Butter

Counter top full of soaking nuts and seeds as I spend my Monday morning squeezing out a bag of nut milk and pulling trays of roasted nuts from the oven before blending them into a batch of yummy nut butter…I’m sorry have I entered a parallel universe. 

Gradually over the past few years I have changed the way I live my life. My old habit of toast for breakfast went out the door (except on Sundays) and my fridge now contains bottles of left over smoothies, containers of cooked quinoa and jars of cashew cheese.
